How is 2007 going to be? Well, we have great hope for this New Year, may all countries have peace and happiness and may 2007 be a prosperous year for all of us.

I have opened a bottle of Chateau Cablanc Bordeaux 2001 and find this good. This 2001 vintage is different from others as its colour is darker. Pour out the red wine, you see a dark ruby red wine and it has a rich aroma of red fruits like cherry and strawberries. I let the wine breathe for an hour before I serve this bottle. In the mouth it taste of berries and a bit tobacco. The wine go down smoothly and has a supple tannins and is low in acidity. A good after taste too. I also like its wine label too.

This wine come from Saint-Pey de-Castets at the Entre-Deux-Mers region in France. It has a 12% alcohol content making up of 20% Cabernet Sauvignon, 20% Cabernet Franc and 60% of Merlot.

I personally like this red wine and it make me feel like having more. Remember to let the wine swirl in your mouth and enjoy its taste before swallowing it down or you will miss the greatest joy of wine appreciation.

Why not have a bottle of Chateau Cablanc Bordeaux 2001 while bringing this New Year. So, this Cork Jet Pump will come in handy and will be a useful tool for all wine lover. This tool has made opening a bottle of wine as easy as anyone can do. You do not need to use your bull strength to pull out the cork. You may wonder how this works. It is simple, it uses a small gas cartridge that releases gas through the needle and the pressure pushes the cork out. No twisting or tugging, just insert the needle, push the button, and watch the cork pop out instantly without any effort. It cost about US$25 to US$30.

This should be available in most wine shop or you may do a search via the internet and purchase it online.

Keep A Wine Bottle Stopper

An important item to have always be with you is a wine bottle stopper. Although it is commonly known that once a bottle is opened, you are unable to place the cork back into the mouth of the bottle and yet, sometime when we need to keep an unfinished bottle of wine back into the refrigerator, we realised that we do not have a wine bottle stopper on hand.

This is very critical as the quality of the wine will be greatly affected if it is not stored properly. The wine stopper is important to prevent more oxygen from entering the bottle and cause further oxidation.

It is not necessary to get an expensive one. A simple wine bottle stopper usually cost a few dollars. However, there are many different designs and colourful stoppers in the market for your collection. You may just go to the shopping mall to get them. Alternatively, you can also get a wide range via the internet online shops.

Wine for new drinkers

I recommend this wine for Christmas party as this is a easy to drink fruity wine and it has an immature but enjoyable flavor not too different from unfermented grape juice. So even the newest wine drinker will have no problem finishing a glass or two.

Each new year, Beaujolais is officially released on the 3rd Thursday of November and no time earlier, which has been mandated by French Law [1]. It is ready to be drunk six weeks after the harvest and is not suitable to be kept and should be consumed few months after production.

This should be served chilled, at approximately 13°C .

Beaujolais nouveau is produced by carbonic maceration followed by Pasteurization, a process which bypasses malolactic fermentation. I love sweet wine, therefore Sherry Wine is one of my favourites. I opened a bottle of Harveys Bristol Cream Sherry, it is deep in colour, A deep breath into the wine, it smell of caramel. I like the smell...hmmm.. Harveys Bristol Cream is unique compared to the standard Cream Sherries. As I sip the wine and swirl the wine in my mouth and let it sit for a second before swallowing, it taste a bit rasins and roasted nuts, full in body and with a subtly spicy finish.

This wine is best enjoyed after dinner and serve together with some orange slices. I like it chilled to about 15 degree celsius before serving as I like it sweet. For those who like it less sweet can have it served with ice.

In United States, this is the most popular imported Sherry Wine and it is also the world best selling Sherry. Harveys has produced wine from the Jerez region of Spain since 1796.

What Is Wine Tasting?

Some may wonder what is so great about tasting wine and what exactly should you do. This is good for the wine at the initial stage, however as it matured, the oxidation in the chemical reaction that occurs when wine come into contact with oxygen will be bad for wine. It will be great if I could open a bottle together with some friends although most of the time I will have a glass for myself or drink with my husband. Nevertheless, the process of smelling the wine, waiting for the wine to breathe and sipping the wine slowly has always been an enjoyment and it is very relaxing at least for me. Especially if the wine leaves a long aftertaste.

I try not to consume too much a day, limit to about one glass a day. So even with my husband sharing the joy of wine appreciation with me, we usually will not finish a bottle of wine. This leads to the question as to how long can wine remain its charm after the bottle is opened. Yes, wine once opened is best consumed within the day. Most wine will lost its charm the next day although some still can hold it a bit longer till the third day.

In the event that you need to keep the bottle overnight, there are some ways to help your wine age better. Read this article.

Enjoy By Letting Your Wine Breathe

I have carried out an experiment myself with two bottles of red wine of same wine label. They were uncorked at the same time. For the first one, I drank it immediately after it was uncorked. For the second one, I let it breathe for about 20 minutes before drinking it. The feeling was different. The first wine tasted good but somehow I did not enjoy while drinking it. Whereas, the feeling of full enjoyment was overwhelm when I was sipping the second wine. This was because the second wine had aerated while it was left to breathe. So let your wine breathe if you wish to enjoy drinking it.

Wine For Different Occassions

Wine appreciation is an art, you need to smell it and have a feel of it before sipping it slowly and tasting it slowly in your mouth. While you are enjoying this feeling of wine tasting, you may be thinking how such wonderful wine is produced.

There are different types of wine for different occasions, so choose the right wine for the right occasion. Generally there are the following 8 types of wine:

Apéritif (or better known as "appetizer wines")
Red wines
Rosé wines (also called "pink wines")
White wines
Sparkling wines
Table wine
Dessert wines
Cooking wines

The labels on wine of certain bottles of wine suggest that they need to be set aside for an hour before drinking to breathe, while other wines are recommended to be drunk as soon as they are opened.
